Muffins Muffins and more Muffins
Here is a quick and easy way to always have fresh muffins. Mix up a batch of our muffin mis (you need one egg, 1/2 cup or cooking oil and 3/4 cup of water and one container ( 3 cups) of our muffin mix. (If you are using the bran mix you will have to add 2 Tablespoons of molasses as well.) We have plain muffin mix, oatmeal and bran for you pick up.
The basic recipe is:
3 cups of Fifendekel Muffin Mix
1.2 cup cooking oil
1 egg slightly beaten
3/4 water
(for bran mix add 3 tablespoons of molasses)
Combine all ingredients and mix thoroughly until well blended or until dry ingredients are absorbed.
Store in a sealed container refrigerated until ready to use.
When you are ready to bake:
scoop 4 ounces of batter into mixing bowl.
Add muffin variety ingredients and mix through
Scoop mixed muffin ingredients into muffin tins that have been lined with cupcake papers and sprayed with cooking oil.
Bake at 360 degrees F for 20 – 25 minutes
Muffin varieties to try:
Raisin Spice – 1/2 cup raisins (pre-soak in water for a minimum of 10 minutes and then drain)
1/4 tsp nutmeg, 1/4 tsp cloves 1 tsp cinnamon. Top with 1.4 cup of crumb topping prior to baking
Strawberry -1/2 cup frozen or fresh strawberries sprinkled with sugar. Top with sugar prior to baking.
Orange Pecan- 1/2 cup pecan pieces , 1/2 cup of orange juice or 1 orange (juice and rind) . Top – brush with butter after baking
Peanut Butter Banana – 1 banana mashed, 2 Tbsp peanut butter. Top with screened peanut pieces prior to baking
Peach – 1/2 cup peaches chopped. Top with cinnamon sugar mixture prior to baking.
Lemon Popppy Seed – 2 tsp lemon rind, 2 TBSP poppy seeds, 1/2 cup lemon juice
Cocoa Macaroon – 1/2 cup coconut, 2 TBSP cocoa, 1/4 tsp almond extract
Cranberry – 1/2 cup frozen cranberries or 1/2 cup cranberry sauce. Top each muffin with 1 frozen cranberry prior to baking.
